Action 2 | Mamo’í he’é | Dulce de Mamón

MAMOI HE’E | DULCE DE MAMON | PAPAYA SWEET RECIPE

INGREDIENTS:

• 1 Kilogram of Papaya Fruit (not too ripe)
• 1 Kilogram of Cane Sugar
• Water
• Clove

Optional: Cinnamon, Lemon or Orange Zest

PREPARATION

  1. Peel the papaya fruits and cut them in vertical slices.
  2. Bring to a boil about 2 liters of water in a large cooking pot and immerse the papaya pieces
    for about 5 min.
  3. Strain the papaya in a cooking strainer and rinse it with cold water.
  4. Put the papaya pieces in a big bowl. Add the cloves and cover it up with water.
  5. Leave it to rest for about 4 hours.
  6. Strain and rinse the papaya pieces again.
  7. Put them in a big bowl and cover them completely with sugar.
  8. Take it to the refrigerator and leave it there for 8 hours or until the fruits had let their juices out.
  9. Transfer the content of the bowl to a big pot. Add 3/4 liter of water and cook it @ high heat for about one minute.
  10. Then reduce the heat to low and cook it slowly for at least 2 hours or until the fruits look clear yellow.
  11. Add the cinnamon and zest if desired and continue to cook for about one more hour or until the fruits look like amber colour.
  12. Don’t stir the fruits at any time because they will break.
  13. When the fruits turned amber, take them out and let them cool down.
  14. When the fruits are cool put them in jars to store them and in your moutn to enjoy them:)
